Lemonade Scones


Makes about 12

4 cups high grade flour
4 teaspoons baking powder
1/2 teaspoon salt
300ml bottle cream
375ml can of lemonade

Sift flour, baking powder and salt into a bowl and make a well in the centre. Pour in the can of lemonade and bottle of cream and mix with a butter knife. Don't over mix.

Turn out onto a floured surface and press out into a rectangle about 3cm thick. Cut with a butter knife into squares or into rounds with a cookie cutter. Arrange on a cold baking tray lined with baking paper, about 2 cm apart.

Bake at 190c for around 12-15 mins or until lightly browned.

Serve with jam or lemon curd.
